Dandelion Jelly with Lemon (Print Version)

01 - 2 cups dandelion petals, yellow only (from approximately 8 cups whole dandelion heads with green parts removed)

05 - 1/2 cup honey

07 - 1 box (1.75 oz) powdered fruit pectin

# Directions:

01 - Rinse dandelion blossoms under cool water and gently pat dry. Remove and discard all green sepals and stems, reserving only the yellow petals.
02 - Combine dandelion petals and water in a medium saucepan. Bring to a boil over high heat, then reduce to a gentle simmer and cook for 10 minutes. Remove from heat and allow to steep undisturbed for 30 minutes.
03 - Pour mixture through a fine mesh sieve or cheesecloth into a clean bowl, pressing gently on petals to extract all liquid. Discard spent petals. Measure infusion; you should have approximately 3 to 3.5 cups dandelion tea.
04 - Return dandelion tea to a clean saucepan. Add fresh lemon juice, grated lemon zest, and honey. Stir thoroughly until honey is fully dissolved.
05 - Whisk in powdered fruit pectin, ensuring no lumps remain. Place saucepan over high heat and stir constantly until mixture reaches a rolling boil that cannot be stirred down.
06 - Add all granulated sugar at once while maintaining a vigorous rolling boil. Continue stirring constantly and return to a full, hard boil. Maintain boil for 1 to 2 minutes, stirring continuously. Remove from heat immediately.
07 - Skim away any foam from surface using a clean spoon. Using a ladle, pour hot jelly into sterilized glass jars, maintaining 1/4 inch headspace from rim. Wipe jar rims clean with damp cloth and seal with lids and bands.
08 - Carefully place filled jars into a boiling water bath canning pot and process for 5 minutes. Remove jars using a jar lifter and arrange on a clean cloth. Allow to cool completely at room temperature without disturbance.
